10 Fold Bread

Ingredients
- 500g all-purpose flour - 1 1/2 cups water - 2 tsp salt - 5g dry yeast
Instructions
In a large bowl, mix flour, yeast, and salt. Then add water and mix. When water has incorporated and dough has started to form, continue mixing with hand until fully incorporated. Cover bowl with clean kitchen towel and let rest for 10 minutes. After 10 minutes, wet hands and fold dough 10 times. Repeat rest and fold process a total of four times. After the last set of folds, cover the dough and let rest for one hour. After one hour, transfer the dough to floured surface and gently open up. Then, fold the dough in on itself to form a ball. Place the dough in a Dutch oven lined with parchment paper. Cover with lid and let rest for 45 minutes. Preheat oven to 550 degrees Fahrenheit. After 45 minutes, dust the top of the bread with flour and make some small cutes at the top. Lower oven temperature to 430 degrees and place covered Dutch oven to bake for 25 minutes. After 25 minutes, carefully remove lid form Dutch oven. Bake bread in unlidded Dutch oven for an additional 20 minutes. Serve!

Homemade Pesto

Ingredients
- 2 cups fresh basil (can substitute half with baby spinach) - 1/2 cup parmesan or romano cheese - 1/2 cup olive oil - 1/3 cup nuts of choice - 3 cloves garlic, minced - 1/4 tsp salt - 1/8 tsp ground black pepper
Instructions
Place basil and nuts into food processor and pulse several times. Add garlic and cheese and pulse again. Use spatula to scoop down sides. While food processor is running, slowly add olive oil. Then, add salt and pepper and pulse to combine. Serve over pasta, as a sandwich condiment, or a savory addition to a charcuterie board!

Fluffy Pancakes

Ingredients
- 3/4 cup milk - 2 tbsp white vinegar - 1 cup all-purpose flour - 2 tbsp white sugar - 1 tsp baking powder - 1/2 tsp baking soda - 1/2 tsp salt - 1 egg - 2 tbsp butter, melted
Instructions
Combine milk with vinegar in a medium bowl and set aside for at least 5 minutes to "sour." Combine flour, sugar, baking powder, baking soda, and salt in large mixing bowl. Whisk egg and butter into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone. Heat large skillet over medium heat and coat with thin layer of olive oil or cooking spray. Pour 1/4 cup of batter onto skillet and cook until bubbles appear on surface. Flip and cook until browned on both sides.
